Mustard types and uses
Yellow Seed:
Yellow Mustard
Bulk Canadian yellow mustard seed (Sinapis alba) is crushed for classic American mustard, pickles and salad-dressing emulsifiers. High 32 % oil content and low erucic acid make it ideal for table condiments and snack-seasoning blends.
Brown Seed:
Brown Mustard
Our Brown Mustard seed exporter lots test ≥ 34 % oil and ≥ 100 µmol/g glucosinolate—perfect for Dijon, Bavarian and whole-grain mustards. Also sought by crushers for spicy edible oils and bio-fumigant meal.
Oriental:
Oriental Mustard
Medium heat with earthy aroma. Popular in Japanese karashi, Chinese sauces and European oil pressing. Bennett’s bulk oriental mustard seed ships FOB Vancouver in 25 kg bags or 1 t totes, colour-sorted to < 1 % admixture.
Flour:
Mustard Flour
Finely milled yellow or brown seed (60-mesh) for dry spice mixes, instant vinaigrettes and meat rubs. Low moisture (≤ 6 %) extends shelf life. Supplied in food-grade kraft bags with tamper-evident liners—ready for industrial blenders.
Oil:
Mustard Oil
Virgin oil, FFA ≤ 2 %, bright yellow hue. Adds nutty, peppery notes to gourmet mayo, dressings and Asian stir-fries. Packed in 190 kg drums or 1 t IBCs; COR & Non-GMO certificates available.
Meal:
Mustard Meal
Protein-rich (34 %) by-product after pressing, used in animal feed, bait pellets and organic soil amendment. Natural glucosinolates act as a bio-fumigant against nematodes—eco-friendly alternative to synthetic chemicals.

Brown Mustard
Bulk Canadian Brown Mustard Seed — Brassica juncea
Grown predominantly in southwest Saskatchewan, our brown mustard seed delivers the pungent kick required for Dijon, Bavarian and whole-grain mustards.
Typical specifications: oil 34–36 %, moisture ≤ 8 % and glucosinolate ≥ 100 μmol/g for maximum flavour extraction.
Each lot comes with an SGS quality certificate and full traceability back to the producer farm to satisfy EU Spice Council audits.
Bennett’s Seed can also crush brown mustard on contract, supplying cold-pressed mustard oil (FFA ≤ 2 %) and defatted meal rich in protein for condiment powders.
Oriental Mustard
Bulk Canadian Oriental Mustard Seed — Brassica juncea var.
Oriental mustard offers medium pungency and a lighter yellow-brown hue, making it the preferred choice for Asian sauces, pickling brines and specialty oils.
Our lots test at oil ≈ 35 % with volatile allyl-isothiocyanate levels ≥ 160 ppm, ensuring the sharp aroma demanded by Japanese and Korean buyers.
Seed is double-aspirated, gravity-separated and colour-sorted for < 1 % foreign matter; PCR tests confirm non-GMO status upon request.
Shipments are loaded in 20 ft containers (≈ 22 t) or bulk rail hoppers, with optional CIF Busan / Yokohama terms arranged through our logistics desk.

Organic / Non-GMO Mustard
For customers requiring a clean-label ingredient, Bennett’s Seed offers organic yellow and brown mustard certified under both COR and USDA NOP programmes.
Fields are audited annually, and each consignment includes a pesticide-residue report (multi-screen – 0.01 ppm) issued by SGS Canada.
Typical protein 26–28 %, oil 32 %, moisture ≤ 8 %. Packaged exclusively in 25 kg paper bags with biodegradable liners to avoid cross-contact during transit.
Lead time is 3–4 weeks from PO; we can blend organic mustard flour to 60-mesh upon request for ready-to-use spice mixes.
